What do you think about pancakes?

By the way, pancake derives from placenta, which in Latin means 'cake'. This puts a new spin on the colloquialism "a bun in the oven".

We have them most Sundays. I hate them when they are improperly cooked (overdone on the outside and underdone on the inside). I prefer them spongey and on the thin side. They are lovely with medlar syrup.

I've never had medlar syrup. What distinguishes it from other types?

It's made from medlars. I make it myself. Basically it's like making a jelly, but you cook it less long so it doesn't gel hard and stays pourable. Blet the medlars, then chop them up and cook them in a very small amount of water, strain the resulting pulp through a cheesecloth, add equal volume of sugar, and cook until it thickens.

And you know they are dead easy to make. Just flour, baking powder, a little salt and little sugar, a little melted butter, eggs and milk. Mix the dry ingredients together and the wet ingredients together, and then mix the two mixtures until blended but not perfectly smooth. ratio is one cup flour to one cup milk to one teaspoon baking powder to two tablespoons melted butter to one egg to one tablespoon sugar. Double, triple, quadruple, etc at will. Hardest part is seasoning the frying pan -- at our house we say the first pancake is for the dog, because it rarely comes out right.

I like the term "flapjacks" but I never call them such in real life.

"Hotcakes" only seems to come up in the context of salesmanship. How come no one ever talks about buying them? Besides, they never appear to be that popular except in the morning. That doesn't seem very profitable as a marketing model.

Does anyone call them "griddlecakes" anymore?

I will never think of flapjacks in the same way.

I like muesli (though that's the Australian term); I wonder what those Britannic flapjacks taste like, then. Are they served warm?

I never learned to make them well but like the ones J. makes. I'm spoiled on buckwheat pancakes and find white-flour pancakes to be a little wimpy, though if done right, they're quite good.

Yes, if the choice were waffles or pancakes, I'd choose waffles every time. Waffles are one of the few reasons I would frequent such an establishment as Denny's.

Amazingly enough, I've never been to IHOP.

I like IHOP because they have burgers with options like fried egg and sourdough bread. I don't think I've ever gotten breakfast food there, though. I should ask for a burger on waffles sometime...

HeidelBurg also has a burger with fried egg. I only go there, though, if I'm walking over from a poly meeting in Braun Court.

There are several hotel chains whose breakfast buffets includes a waffle irons and (white flour) batter. Whenever we stay at one of these I have to resist the temptation to indulge in empty calories.
