"beauty is truth, truth beauty" is a sentence that doesn't have a truth value, so you can't apply negations to it and get sentences with truth values either.

Beauty is an feeling, a sensation, a perception. It is true for the one who expereinces it, but not necessarilly true for everyone. It is just the unreasonable societal belief that what is true is true for everyone combined with a dichotomous way of looking at things - ie, it must be either true or false and not just be- that makes it seem a question which needs to be asked at all.
