Cicada: The Other, Other White Meat

here in costa rica, cicadas are a 24/6 365 day thing.

they are large, green and have bulging red eyes.

and our dig snatches them from the fire when they get too close.

they are really beautiful, their wings look like lace made from silver and copper wires.

and yes, they are tasty - i pan fry them with cornmeal batter and serve with cocktail sauce.
