It's funny. Now that I've basically beaten the game, I'm deriving most of my fun from constructing coasters. I never thought I'd say that.
SunSplash is 14 years old, and wow are there a lot of administrative duties to take care of when a park is that old. Everything keeps breaking down. You don't have enough time to replace them all. Paths get all vomity and your customers start to complain. Mechanics can't find their way to the rides they're supposed to fix. It all really culminates around Year 8.
So I restarted an older scenario, mainly to practice building my own rides. It was nice to work with a smaller map (one not so intimidating!). I built my first single-rail coaster. As it's fitted with racehorses or motorbikes, I stayed with the horses and called the attraction "Place Your Bets". It's fairly popular--I get a lot of repeat business.
I'm hoping to try my hand at every coaster type.
I'm already craving the expansion packs and RCT 2.
