It's late; I should certainly be in bed. But I made a dish for the first time this evening & thought I'd make mark of the situation.

It's loosely based on this recipe plus another.

I took three medium-sized zucchini & sliced them 1/4" thick. I also diced about 1 small sweet onion & one full moderately hot pepper (I combined one whole serrano, seeded, with one-half of a jalepeno, also seeded).

First, I sauteed the onions & peppers in olive oil. Then I added the zucchini, along with a dozen or score of grape tomatoes plus a roma tomato (grapes halved, roma chopped into sixteenths). I salted & peppered this to taste, then let all saute/simmer while I cut about 1/4 cup of fresh basil leaves into strips. I added the basil, about 1/2 cup of corn kernels (some fresh, some previously boiled, all still on the cob), a dollop of butter, a half-handful of shredded mozzarella & a half-handful of shredded cheddar to the dish, then folded in the dairy until melted.

This dish is actually really good, which to me means, "I want to keep eating it." I'll keep this in mind for days I'm trying to avoid meat. (Today was Meatless Monday, anyway.) Tasty though it was/is, I could still afford to put in another hot pepper of various heat. More corn kernels might be needed, too. But the flavor is definitely there; I don't say that about many of my dishes.
