Jul. 18th, 2009 11:26 pmIn the future, I will substitute apple or grape juice for the red wine, as the balsamic vinegar has dominated the flavor of the stew. I added more than a handful of sugar in an attempt to balance out the taste, but it was overwhelmed.
I didn't have the entire two cups of blueberries as I'd hoped. Plus I only had one potato and one sweet potato, both small. Next time, I would like to double or triple the amounts I had. (By the way, the blueberries cooked right down. You can't tell they were even in the mix.)
Also, I won't be using lentils anymore, as they take forever to cook.
Best ingredients for a sweet stew: corn, peas, kidney beans, potatoes, sweet potatoes, blueberries, vedalia onion, carrot, red/orange/yellow bell pepper. Celery would have been nice to add as well. Also included in tonight's dish were yellow squash (I would have preferred zucchini, but I'd eaten it all), green onion (subs. for shallots), mushrooms, and lentils. Exact measurements (esp. for spices) to be added to this post soon.
