Tonight, I prepared the sauteed zucchini dish for [livejournal.com profile] sarahmichigan and [livejournal.com profile] dionysus1999. I didn't have enough red bell pepper (well, actually, orange), so I substituted carrot instead (thanks for the suggestion, [livejournal.com profile] davidfcooper). I added almonds, as one of the recipes I'd researched suggested sauteing zucchini with almonds. Lastly, I forgot the dash of sugar, but the marinara sauce was sufficiently sweet, I think.

Ingredients:

2 c. zucchini, sliced 1/4" thick
1 c. red/yellow/orange bell pepper, diced
1/2 c. onion, diced
1 tomato, chunked
1/2 c. carrot, thinly sliced (if desired)
1/4 cup sliced almonds (if desired)
1/2 clove garlic, minced (or 1 tsp. garlic powder)
1 tsp. oregano
1 tsp. basil
salt & black pepper to taste
2 tbsp. olive oil
4 oz. marinara sauce
dash sugar (if desired)
Parmesan cheese (shredded or grated)

Add olive oil to large pan under medium heat. Add onion & bell pepper, heat for 2-3 mins. Add almonds if desired, taking care not to overheat them. Saute 2-3 mins. Add carrot, if desired. Sprinkle oregano, basil, salt & black pepper over veggies, mix well.

Add tomato chunks to mixture. Heat 2-3 mins before adding zucchini. Saute 5-7 mins, until some of the middles of the zucchini slices soften.

Pour in marinara sauce, spread through mixture. Toss in the dash of sugar if desired. Cook until zucchini has softened to preferred texture.

Serve over noodles. Top with Parmesan cheese.

This takes about 30 mins of prep, 30 mins of cooking.
