It'd be nice if they didn't hide the fact they're strictly talking about type 2.

Unless they specifically specify it, "diabetes" means "type 2 adult-onset diabetes".
When they mean Type 1, they usually say so.

Just like when they say "diabetes", they usually mean "diabetes mellitus" and not "diabetes insipidus".

Is it the GBS itself, or the very careful diet that people who've had that surgery then have to follow?

Its the way the surgery changes how food is absorbed in the body (or not absorbed) if i understand correctly.
