What do you think about pancakes?

By the way, pancake derives from placenta, which in Latin means 'cake'. This puts a new spin on the colloquialism "a bun in the oven".

I've never had medlar syrup. What distinguishes it from other types?

It's made from medlars. I make it myself. Basically it's like making a jelly, but you cook it less long so it doesn't gel hard and stays pourable. Blet the medlars, then chop them up and cook them in a very small amount of water, strain the resulting pulp through a cheesecloth, add equal volume of sugar, and cook until it thickens.

And you know they are dead easy to make. Just flour, baking powder, a little salt and little sugar, a little melted butter, eggs and milk. Mix the dry ingredients together and the wet ingredients together, and then mix the two mixtures until blended but not perfectly smooth. ratio is one cup flour to one cup milk to one teaspoon baking powder to two tablespoons melted butter to one egg to one tablespoon sugar. Double, triple, quadruple, etc at will. Hardest part is seasoning the frying pan -- at our house we say the first pancake is for the dog, because it rarely comes out right.
