I've decided to try out a cobbler recipe, substituting mulberries for blueberries. I should add salt to this recipe, I think, as mulberries are so much sweeter than blueberries and not tart at all.

A touch of salt is good in all sweet desserts. You could also experiment with various vinegars.

Are you picking the mulberries or buying them? I was just picking mulberries this weekend. I actually find the not-perfectly-ripe mulberries considerably tart, so if you want not-too-sweet, include some of those.

Picking. I don't think I've ever seen mulberries for sale.

You're right about the not-quite-ripe ones. I ended up picking some of those by chance, and they did provide a bit of pique.
